This recipe was highly requested when this picture went up on my Insta profile on the eve of Christmas 2016!!
Instead of the regular cupcakes and tea cakes that I am used to baking on most weekends, I thought I'll try a pie instead since it's Christmas!!
If you have been following me for sometime, you'll know by now that my bakes are easy and tasty so let's jump straight into baking one for you today!
The next time though, I would like to check out Red Man's ready made pie crusts or even attempt to make it myself. This pie crust (in the picture and recipe) had salty patches and burnt easily (in my opinion)
Ingredients:
- 100 gms of Light Brown Sugar
- 50 gms of melted SCS Butter
- 50 gms of Superfine Castor Sugar
- 2 medium eggs
- 50 gms of Self-Raising Flour
- 20ml of white milk
- 1 capful of pure Vanilla Extract
- 100 gms of Chopped Almonds
- 1 store bought pie crust (I used Keebler brand from Cold Storage)
- 2 generous dollops of Nutella Spread
Method:
- Beat eggs till fluffy, add the melted butter (at room temperature), sugar and the rest of the ingredients.
- Continue beating the mixture for a few more minutes and pour the mixture into the ready made crust.
- Drop two generous dollops of Nutella spread on opposite corners of the crust.
- To make a pattern, you can dip in a toothpick and drag the nutella mixture in an upward and downward motion on both sides.
Bake at a preheated oven at 200 Deg Cel for 45mins and leave it to cool for an hour.
I imagine the pie to taste great with a scoop of Vanilla Bean ice-cream or with a light drizzle of Hot Chocolate sauce, yumm!! Have it your way:)
I hope you enjoyed my recipe for this week's post. Do give this recipe a try and share with me on your social media with the hashtag, #TheLeiaV so that I could see and like your pictures!!
